A red wine with lamb
Red wine is the classic wine to serve with lamb. If you cook the lamb in a 7-hour leg of lamb, for example, the meat becomes candied and has a roundness in the mouth. Young, structured red wines from the South-West or more evolved (aged) ones such as Bordeaux will go wonderfully well with the evolutionary notes. Moreover, whatever the cooking of the lamb, it should be accompanied by a fairly full-bodied red wine with silky tannins.
