All you need to know about natural wine,
the essential in a few lines
Made from organically grown grapes, natural wine aims to find the expression of a terroir, far from formatted and conventional practices. By rejecting the use of chemicals, the winemaker "natural" , sensitive to the respect of its environment, makes a living and free wine.
In the vineyard
These winegrowers respect the soil, the nature of the subsoil, the vines, the grapes and, in the end, the wine lover. They follow precise specifications to have their wine certified by private organisations linked to the organic label (Agriculture Biologique, Ecocert) and/or Biodynamic (Demeter, Biodyvin).
It is then confirmed that the working methods of winemaker are based on the respect of the living, without chemicals or synthetic products. This is the basis of the natural philosophy. By choosing this ethical and responsible path, winemaker works its terroir by ploughing with care. It cares about the subsoil from which the roots of the plant draw, and therefore protects the ecosystem.
The emphasis is on the grapes, giving priority to quality rather than quantity. In line with organic farming, some people practice biodynamic viticulture. This strongly reinforces the link between winemaker and its vineyard, in particular by following a lunar calendar to work the vines. They recommend homeopathic preparations to nourish the soil in a healthy way.
At the vinification
Manual harvesting is preferred to mechanical harvesting. Only indigenous yeasts are authorised to start fermentation and the use of sulphur is minimal (30mg/l for reds, 40mg/l for tolerated whites) or even nil (mention "Wine without added sulphites"). Handling is gentle and slow so as not to modify or make up for the soul of the wine: little or no racking, ageing on lees, weak filtration, etc... To sum up, we can therefore say that winemaker organic or natural accompanies the wine to guarantee the natural reflection of the juice.
In bottle
The natural winemaker , attached to its freedom and freed from all constraints, can do without the geographical and taste pleasures of an AOC. This is why natural wine is sometimes classified as "Vin de Pays" or " Vin de France ".
