The Art of Natural Wine on finesse
Founded in 2020 by Tess and Charles, Winery Davoche Wines embodies a new vision of viticulture in the south of France. This passionate winemaking couple, with a wealth of international experience - Charles trained in the Loire and with Cyril Fahl, Tess ex-chef at Noma and trained at prestigious estates in Australia and France - began their winegrowing adventure as négociants.
Their journey took place in several stages:
- 2020-2022: Trading activity under the "Clafoutis" name
- 2021: Move to the South of France, with Charles working for Cyril Fhal (Clos du Rouge Gorge) and Tess for Tom Lubbe (Matassa).
- 2022: Acquisition of 2.5 hectares of vineyards in Occitanie
- 2023: Production of 6,000 bottles exclusively from their own vineyards
Their approach combines tradition and innovation. In their vineyards, they practice organic and biodynamic viticulture (in the process of obtaining organic certification), working the soil with horses and by hand, adapting to the challenges of the local drought. In the cellar, their philosophy is one of minimal intervention: manual vinification, limited use of machinery, and sulfites added only when necessary.
The "Davoche" style is characterized by mineral, complex and nuanced white wines, and fresh, delicate reds. Their range includes Winery cuvées such as La Sardinière, Peychourigué, Sol y les, and négoce cuvées such as Clafoutis (Syrah, Grenache, Mourvèdre), as well as the original Muti, a vermouth-style flavored wine.
Winery Les Davoche aspires to create fine natural wines, capable of shining in the finest restaurants while remaining true to their philosophy of respect for nature. Their limited production reflects a commitment to the quality and individuality of each cuvée, representing the vanguard of a new generation of winemakers combining global expertise and modern vision to produce exceptional natural wines.
