"The idea for the name came from the first wine Guido Zampaglione produced from Fiano grapes in Calitri in 2004. Don Quixote because Guido, as a mad dreamer, was the only one who believed in the possibility of planting Fiano at 800 meters above sea level."
Acidity, drinkability and good complexity are the hallmarks of this wine made from 100% Fiano grapes.
Vinification: approx. 60 days maceration on skins. Spontaneous fermentation with indigenous yeasts, very low levels of sulfur dioxide (0-10 free, 10-20 total), no other additives are used.
Aging potential: suitable for long aging, 15-20 years.
Serving temperature: 10°-12°
Serving suggestions: pasta or vegetable risotto or fish, white meats.
