Monte Mattina - Fiano 2019 - IGT Camapania Fiano - Il Tufiello
"The MonteMattina cuvée bears the name of its territory of origin. It was born because the Sancho Panza cuvée was always on break and therefore always too early to show the wine's long-keeping potential."
A wine with fine tannins that shows complexity and great maturity. Like Guido and Igiea's other orange wines, there's a crazy complexity with density and depth. Great sapidity!
Vinification: approximately 60 days of maceration on the skins. Spontaneous fermentation with indigenous yeasts, very low sulfur dioxide levels (0-10 free, 10-20 total), no other additives used.
Aging potential: suitable for 15-20 years of ageing.
Food pairing: cheese, smoked fish, shellfish and savoury starters.
