Which wine to use with poultry? (turkey, capon, guinea fowl)
Poultry and wine: the family dish!
Is the starter finished? The fish too? It's time for the main course and the famous poultry! This is the dish that is most often found on our tables at family dinners. Turkey, capon, poularde, guinea fowl, there's something for everyone! Which one should you choose to accompany your Christmas poultry with a good wine? Let's take a look at it all together.
Which poultry to use with your wine
Which bird will you choose this year? Still not sure? Here are some details that might help you make your choice:
- capon: it has a tender and soft flesh because it is a rather fatty poultry. It cooks very well in a casserole with a white wine. Organic, biodynamic or natural, it will be even better, naturally!
- turkey: unlike capon, its meat is less tender but much less fatty and therefore much lower in calories. We advise you to cook it stuffed!
- guinea fowl: this is a lean meat, it is not very fatty, its flesh is firmer, juicier and darker than the previous poultry. It is excellent in different forms: stuffed, roasted, in foil, etc.
- the poularde: the female side of the capon, its flesh is even more moist and tender but, beware of Christmas gluttons, the poularde is smaller than the capon.
- Goose: with its gamey flavour, it is perfect for large meals as it is quite large. Its flesh is fatty and juicy. Do not hesitate to cook it with fruit, it is a delight!
What wine to serve with Christmas poultry?
For poultry such as capon or turkey, the ideal accompaniment is a fairly fine red wine, i.e. with little tannin. A Syrah from the Rhone Valley or a well-balanced Pinot Noir from Burgundy or Alsace, with a little but not too much body. A white wine will also go well with capon or turkey. Choose a white wine that is round and full-bodied without being too exuberant, such as a Chardonnay or a white from the Languedoc, for example. They will go very well with a dish in sauce!
For poultry such as chicken, guinea fowl or goose, the flesh of these birds is less strong, so you can start with finer red wines such as gamay, light pinot noir or a cabernet franc worked with finesse. A white wine such as a Chenin can also go very well with your guinea fowl or chicken.
