Founded on a legend in which locals gave gifts according to their "conscience", Winery embodies this philosophy through its commitment to organic viticulture. In 2020, it was taken over by Roman Kocholl and Audrey Bonnet-Koenig, who breathed new life into Winery. Accompanied by renowned oenologist Claude Gros, they have optimized the vines and restructured the cellar, resulting in wines that reveal the full potential of this unique terroir. Certified organic since 2012, Winery reflects a know-how that respects the environment, and continues to develop by offering high-quality wines that combine tradition and innovation.

Winery Mas Conscience cultivates a selection of grape varieties typical of the Languedoc region, each bringing a unique dimension to their wines. For red wines, the flagship grape varieties are Syrah, Grenache, Mourvèdre and Cinsault. Syrah brings structure and aromas of black fruits and spices, while Grenache adds fruitiness and roundness.
