Valentina Passalacqua, Winemaker committed to the Gargano region in the north of Puglia (Italy's Deep South!), offers pure wines, highlighting the minerality of its limestone soil.
After studying Law and starting her career in the London business community, Valentina Passalacqua returns to the land, and takes over the family Winery in the town of Apricena, Italy. She explains this choice in particular following the birth of her daughter Giula. She then realizes that she wants to return to a simple life, more coherent with what she was able to live during her own childhood, and thus leaves the comfort (and stress) of her London life. Winery has been run by her family for several generations and consists of 80 hectares of vineyards on the Adriatic coast. Around it? The Gargano National Park (there are sadder and less beautiful places in the world!). Here there is a terroir made up of Kimmeridgian limestone soils from the Jurassic (similar to Chablis) which gives a certain minerality to the wines produced.
Extremely sensitive to the well-being of her family and the nature that surrounds her, Valentina leads the Winery in organic farming. The latter has been certified since 1999. Also very attached to the relationship between living beings and the environment in which she evolves, Valentina has been applying biodynamic practices at Winery since 2000. Harvesting is done by hand and in small 20 kg crates.
Through her wines, Signora Passalacqua also wishes to show the unique expression of the region's autochthonous and traditional grape varieties: Nero di Troia, Primitivo, Negroamaro, Bombino bianco and Montepulciano. Most of the wines of Winery are in mono-Grape variety.
In the winery, as you will have understood, the vinification is done as naturally as possible. The harvest is de-stemmed and then placed in stainless steel tanks for spontaneous fermentation thanks to indigenous yeasts. The wines are then left to rest on fine lees. The wines are not fined or filtered, and bottling is done with little or no sulphur.
In contrast to the current trend in Puglia vineyards, Valentina seeks to express the minerality of its terroir in its wines, giving priority to juices that are fruity and low in alcohol.
