Jean-François Ganevat stands out for his meticulous approach in the cellar, where every detail counts to reveal the best of the Jura terroirs. After a completely hand-stemmed harvest, the grapes are vinified naturally, without filtration and with little or no sulfur. Since 2006, certain cuvées such as "Billat" and "Florine" contain a maximum of 1 gram of sulfur, while the reds are vinified without added sulfur. Aging is long, sometimes up to 11 years for emblematic cuvées such as "La Vigne de Mon Père". Always striving for perfection, Ganevat experiments with different containers, from demi-muids to barrels to large-capacity vats, to create wines with varied, complex profiles. This painstaking process, a real obstacle course for tasting, makes his wines unique and unforgettable.

How does Jean-François Ganevat grow his vines in the Jura?
Jean-François Ganevat took over the family Winery in 1998, marking a turning point in vineyard management. Inspired by his encounters with the likes of Philippe Pacalet and Didier Barral, he decided to convert his entire vineyard to biodynamic viticulture. Located in the hamlet of La Combe, his plots benefit from an exceptional natural environment, where the soil is nourished solely by plant-based preparations such as horsetail, dandelion and nettle. This biodynamic approach, which excludes the use of chemical additives, guarantees the preservation of biodiversity and the purity of the grapes. In difficult years, minimal use of copper and sulfur is sometimes necessary, but always sparingly. Eight people work alongside Ganevat to pamper these vines, with constant attention to the quality of the soil and grape varieties, such as Chardonnay, Savagnin, Poulsard, and even rare varieties like Enfariné and Savagnin Gros Vert.
