We're talking to you about his Winery

Aurélien Houillon hails from the Franche-Comté region of France. He met Pierre Overnoy as a child and learned the trade of winemaker with him. He sets up as a partner in Maison Pierre Overnoy in Pupillin, Jura. This was the period when the Houillon family joined forces to form GAEC Houillon (Manu, Aurélien and Adeline) to run Pierre (Overnoy)'s vineyards. The small surface area and low yields didn't allow the partnership to exist for very long.

In 2007-2008, Aurélien moved to Switzerland and converted a Winery vineyard to biodynamic viticulture, thus extending his experience in natural wines to new grape varieties.

In 2016, Aurélien and Charlotte settled at the foot of Mont Ventoux, in Faucon (Vaucluse), more precisely at the Roche Coucourde, a saffron-shaped rock formation that gives the terroir and wines of Winery their distinctive character. The Winery vineyard covers 9 hectares (vines, woodland and moorland). It is farmed organically. The soil is worked mechanically, without the use of pesticides, and is enriched with fertilizer supplied by their two companions, Victoire and Castor (horse and donkey).

In the winery, Aurélien applies Jules Chauvet's vinification method. He does not use any oenological inputs (yeast, glue, sulphur) and respects his raw material (no filtration, work by gravity), in order to leave the wines with all their aromatic expression and ageing potential. The wines produced at Winery Houillon respect the specifications of the Côtes du Rhône appellation and are natural wines in the strictest sense of the term.

For her part, Charlotte Houillon (née Touati) is a specialist in ancient manuscripts. Her research led her to spend long periods in China and Ethiopia, where she learned the traditional methods of making paper from plants, as well as the art of natural pigments. In 2015, she left her university position and became a service provider in animal traction.

Bottles from Winery Houillon are hand-labeled with vine shoot paper produced on site. The first vintage is 2017! In addition, Winery has 2 guest rooms in a beautifully renovated farmhouse, well worth a visit!
