We're talking to you about his Winery
Thomas Jullien's objective, at Winery of the Ferme Saint-Martin: healthy and ripe grapes, balanced and lively yellow earth soils. Everything is done so that the terroir expresses itself, here, between Dentelles de Montmirail and Mont-Ventoux! The grapes are harvested by hand with a first sorting in the vineyard and a second in the cellar on the conveyor belt on arrival. The vinification of the 9 cuvées for 3 appellations (Beaume de Venise, Côtes du Ventoux and Côtes du Rhône) is different but always with indigenous yeasts. No additives, no sulphites in vinification and slight rebalancing at bottling. The approach here has long been completely natural: total ploughing, no pesticides, no synthetic molecules, plant cover in winter, some preparations borrowed from biodynamics, little copper (favourable climatic context). | On former orchards, the Winery was born in 1964 and from 1970, the Winery is really constituted. For about ten years, the cultivation approach remained reasoned and finally adopted the specifications of organic farming in 1998. 8 ha on the Ventoux appellation then completed the Winery. In 2006, little by little, the son Thomas joined Winery to build a tasting cellar. Everything is being done gradually and nothing is set in stone. The Winery, ideally situated at 400 m altitude, facing south, is in the heart of the Dentelles de Montmirail and today 25 hectares are planted with vines. |
