Stéphane Morin, in another life, was a photographer. He is now winemaker at Winery Léonine! And what a winemaker ! As soon as he settled in 2005 in Roussillon, south of Perpignan, he met the right people, such as Jean-François Nicq, from Les Foulards Rouges. The next step seems obvious to him, he wants to make natural wines. For him, luck is on his side because the vines he took over belong to an 'old' man who has always refused to use modern chemistry. The relatively old vines are healthy, the soils are healthy too.... The gain in time is and will be significant. So Stéphane can work his soils with herbal teas, mechanical ploughing and sometimes even with horses. | TheGrape varieties of Winery is mainly Grenache. We should say grenaches, blacks, greys, whites vinified with precision and finesse. Here there is no search for extraction. The use of carbonic acid is important but it brings (or/and brings) a lot of brightness to all these wines, freshness as it is often said. Here perhaps more than elsewhere, this freshness is very important. Stéphane is a happy man and so are we: because we can work with him :) |
