The history and vision of Winery Python Paillé
Winery Pithon-Paillé, rooted in the Loire Valley, was born of a family's passion and commitment to the terroirs of this wine-growing region. Founded by Jo Pithon in 1978, Winery has been committed to environmentally-friendly viticulture and biodiversity from the outset. Jo Pithon distinguished himself by his innovative vision and his choice of organic growing methods at a time when these practices were still not widespread. This commitment to quality and authenticity has enabled Winery to quickly make a name for itself in the Anjou region and beyond.
In the 2000s, Jo Pithon joined forces with his nephew, Joseph Paillé, bringing a breath of both renewal and continuity. Together, they continue to cultivate vines on renowned terroirs such as Savennières, Layon and Coteaux du Layon, producing wines of great finesse, marked by their terroir. In 2008, Jo Pithon decided to hand over Winery to his partners for a fresh start. But his visionary spirit remains engraved in the DNA of Winery Pithon-Paillé, which continues to favor sustainable viticulture and minimal intervention in the cellar to reveal the full purity of local grape varieties, particularly Chenin.
Craftsmanship for pure, elegant wines
In the Python Paillé cellars, winemaking is an artistic process carried out with respect for each individual Grape variety and the potential of each vintage. Red and white wines are made using natural winemaking methods, with no oenological inputs, allowing authentic aromas to develop unhindered. For the reds, a long maceration is favored, to extract the best from the tannins and give the wines a balanced, powerful structure, while maintaining their characteristic finesse. As for the whites, they are vinified gently and precisely to preserve their freshness and minerality.
Winery uses indigenous yeasts to promote natural fermentations, avoiding external additions that might mask the nuances of the terroir. Ageing takes place in oak barrels, allowing the wines to gain in complexity, while contact with the lees adds extra roundness. This technique of maturing on the lees, without filtration or fining, reveals the subtle aromas and silky texture that characterize Python Paillé wines. Finally, each cuvée is bottled by hand, a final step that reflects the meticulous care given to every detail throughout the process, to deliver authentic wines of remarkable quality.
