| Edouard Laffitte works his 7 hectares of Winery at the end of the world in organic farming on three communes in Roussillon: 3 hectares in Lansac on granite arenas, 2 in Rasiguères on schist, 2 in Cassagnes on gneiss. The harvest is done by hand, the vinification is natural, in carbonic maceration and at low temperature. The wines are not filtered. He vinifies by terroir; one vintage of white (Brave Margot) and 5 vintages of red. After several years working at the Estézargues cooperative cellar, Edouard Laffitte wanted to work the land. Many of his friends had already tried the adventure... Not being of agricultural origin, Edouard started from scratch. | But fortunately, Loïc Roure (Winery du Possible ) who has just settled in Lansac at "JAJAKISTAN", in the Pyrénées-Orientales, offers to welcome him in the cellar he has just acquired, a former cooperative cellar. All that remains is to find the vines; his choice is for vines at high altitude, with a north-facing exposure to favour freshness, fruit and limit alcohol. The little story goes that the first visitors found it was " Le Bout du Monde ", hence the name Winery ! Wines to be discovered very quickly! |
