What is a Pet Nat (Pétillant Naturel):
This is a natural sparkling wine. The grapes are grown using organic or biodynamic methods. No additives or sulfites are added: just like natural wine.
What about the winemaking process?
The grapes are picked and pressed, and the juice begins alcoholic fermentation. Once a certain amount of residual sugar has been reached, fermentation is stopped by the cold. Then, as the temperature rises, the juice is bottled, where it resumes and completes fermentation. If fermentation continues, the enclosed gas will produce bubbles!
