Gamay from the Vallée du Doux (Arlebosc) was once very famous, and the "prince of gastronomy" (Curnonsky) quoted it in his writings. For a variety of reasons, only 20 hectares remain of the 100 hectares planted in the valley at the time. Since 1992, Hervé Souhaut has been working tirelessly to revitalize the wines of this valley. The result is there, and we've known it for years...
Long maceration at low temperature, without destemming. Aged on fine lees.
