Jo Liqueur (70cl) - Liqueur wine - Winery Bornard
An exercise in style: the juice is unfermented, then gently toasted for 48 hours to concentrate the sugar. This is followed by mutage (fine Jura marc), which blocks fermentation and preserves sugar. The trick is to maintain a balance on the palate between acidity (freshness) and sweetness. It's delicious, gourmet and original.
