| More than the "organic" logo, which is a way of respecting the consumer, Jérémy Illouz (Winery Parlange et Illouz, west of Cahors) goes beyond the specifications of the certification. Wines that are more than organic, that's what it takes! For the record, winemaker itself downgraded its wines to Vin de France for the 2015 vintage, rightly reproaching the productivist vision and decrees of the local appellation. In 2013, he had been refused approval for a "not enough pronounced color"!!! In short, here is a boy who knows what he wants and keeps his promises! After leaving the Paris region, Jérémie Illouz began studying at the University of Bordeaux in 2004 with the desire to become winemaker. There he met a certain Fabien Jouves (Mas del Périé) with whom he set up a trading business in 2008. | In 2012, he moved to the lot, in Villesèque, on 6 hectares. Right away, he wants quality. Soil life, microbial, and wildlife present is respected. Chemical inputs are banned. The old Malbec vines, for example, which grow on iron-rich siderolitic soils, offer highly concentrated grapes and make up the great gourmet cuvée "Haute Pièce" (aged 18 months in barrels). A delight. And God knows that Malbec is not a convenient Grape variety ! It is preferable to harvest it by hand, to put it in vats by gravity, to use a vertical press and to avoid too long macerations. For the rest of the range, Jérémie has switched to organic farming. He seeks to make wines that best reflect the terroir, far from the conventional which has overly weakened the region. Vote Illouz! |
