Originally from Brest, Thibault Stephan first trained at winemaker in Ardèche. But he was attracted by the terroirs of the West and, in 2015, he moved to Puy Notre Dame, near Saumur in Anjou. A very pretty village, rooted in the "Turonian" tuffeau where several organic and natural winegrowers are already established.
Thibault works 4.5 hectares of vines, divided between 1/3 Chenin and 2/3 Cabernet Franc. The soil is worked with respect and the vines are cultivated organically, with a marked interest in the precepts of biodynamics. All direct actions on the vines are manual in order to fill the barrels with healthy and lively grapes. |
