The 7 Extra-Brut Solera - Laherte Frères
Centuries before, the Laherte ancestors were already cultivating vines. The working methods were not the same as today, and neither were the grape varieties. These lost grape varieties of the Champagne region have been rediscovered in the heart of the oldest plots. Aurélien and his parents decided to recreate a parcel of yesteryear, to taste once again what a Champagne wine was 250 years ago...
Grape varieties: 10% Pinot Gris (Fromenteau), 8% Arbanne, 14% Pinot Noir, 18% Chardonnay, 17% Pinot Blanc, 18% Pinot Meunier and 15% Petit Meslier
Winemaking method:
Hand-picked grapes at optimum ripeness and traditional pressing - Selection of first juices only with very light settling - Slow, spontaneous alcoholic fermentation in barrels (at least 10 years old) - Aged on fine lees for 6 months with regular stirring of the lees until spring - Malolactic fermentation not carried out.
A blend of several years is made, like a solera: 50% of the year's wines are added to 50% of a perpetual reserve from previous years (since the first harvest in 2005)
Light filtration before bottling.
Disgorging and dosage: from 0 to 4g in October 2022.
