Clos Sainte Sophie 2017 - Champagne Jacques Lassaigne
This 1.2 ha plot, enclosed by a hedge, belongs to the Valton family (grandson of Petit Bateau founder Pierre Valton). The Lassaigne family has had the privilege of working these 50-year-old Chardonnay vines since 2010.
"In fact, the first vines to be planted at the foot of Mount Fuji (in 1877!!!) came from this vineyard... crazy, isn't it! The Clos Sainte-Sophie, located 200 meters from maison , is a verdant setting designed by botanist Charles Baltet: with M.Dupont, professor of agriculture and owner of the estate at the time. Giant redwoods and some twenty grape variety trials were planted, in a garden of many attractions, including an 1865 wine press.
During the Meiji era, Japan entered the Age of Enlightenment, and two emissaries came to join Charles Baltet to learn the art of vine pruning. After a long apprenticeship, they leave with 100 vines to be planted at the foot of Mount Fuji, for what will become the cradle of Japanese wine production: koshu."
