Les Vins de la Cadette: everything is done to make us discover a living wine, honouring its terroir (the Burgundian terroir of the Vézelay region). The philosophy of maison : to compose wines with a particular climatology, soil, topography, grape varieties and microbial life. "In other words, making with what you have, bringing what you are." (Jean Montanet). The first traces of vineyards on this territory are historical and correspond to the Roman settlement, they underline a tradition that over the centuries and events, has been able to renew itself. At Winery of La Cadette are Jean, Christine and their son Valentin Montanetwho work their vines with the utmost respect for the biodiversity that surrounds them. | This is how the wines of this Winery blossom without any chemistry in order to preserve their character and their life on about twenty hectares. By following a strictly organic viticulture method (certified), with hand-picked grapes, and respecting the environment, the vintages prove to be of high quality. The vinification process is, like the rest, carried out without unnecessary additions. No yeasts, no chaptalisation, little sulphites... The wines of La Cadette represent a brand that brings together two estates: La Cadette, Montanet Thoden and a winemaking company: The younger sister. |
