We're telling you about their Winery
At Winery Pacina, in Tuscany, biodiversity is a strong and striking factor in the balance of the vines, allowing more resistance. An unchanged nature for several millennia has allowed a real microclimate where many plant and animal species can be found. The work of Giovanna Tiezzi (the heiress) and Stefano Borsa, her husband, continues to respect this environment. Of the 65 hectares of the estate, 10 are dedicated to vineyards, 8 to olive trees and many plots of land are used for the production of rice and different varieties of chickpeas. Here as elsewhere (see the winegrowers we support), the natural work of the vines is the highlight of Winery. Only the family does this work: Stefano, Giovanna and the children. The winemaking process is based on the same principle, with little intervention: the wine is neither filtered nor clarified and with minimal use of sulphur (free sulphur rarely exceeding 8-9mg/l). | Yields are around 35hl/ha. It is a courageous, difficult, laborious work. They can be proud! The Winery, taken over in 1992 by the couple was very quickly oriented with the obsession to produce a great traditional, not to say natural Sangiovese on these lands. The efforts are important, precise, slow and passionate. In 2009, they decided that the compromise to save the Chianti Colline Senesi appellation was not worth it. Minimizing the use of sulfur and restoring nobility to this Grape variety expressing its terroir, its minerality remain more important than the wishes of an administration closed to this type of approach. The wines lose their appellation but keep their identity, their biodiversity, their freedom and will be under the name IGT. The Grape variety king of the Winery is therefore the Sangiovese but other emblematic grape varieties of the region are also represented: Canaiolo, Cillegiolo, Trebbiano or Malvasia... |
