A highly concentrated, fresh wine
The grapes used to make L'Ivresse de Noé come from vines planted on clay-limestone soils, hand-harvested in mid-November. The ripe Savagnin grapes are pressed once they reach the winery. The must ferments and matures in old 400-liter barrels for two years.
The name of this wine, L'Ivresse de Noé, refers to the biblical passage about the drunkenness of Noah, the father of vines and wine.
