Unlike the classic Cairanne from
Winery , we have chosen to age it in half
muid (aged a few wines = no new wood)
for 18 months.
A wine that plays on the power of its aromas, its tactile qualities in the mouth. Beautiful freshness. Very dense, opaque colour. The nose is complex and plays with red fruits, plums, prunes, chocolate notes, black olives, blond tobacco, dried flowers and a super light woody aromatic touch. It is fine and elegant!

Between earth and earth 2019 - Périgord

A nose of garrigue dried by a summer sun, small black fruits and a beautiful mineral graphite touch that will be found in the mouth. The tannins, although present, are fine and supple as Grégoire Rousseau knows how to do with his Merlot. The minerality is there, with a superb fresh and elegant structure. An organic wine aged 50% in demi-muid and 50% in earthenware jars.

Mix of Coton - 2019

During a magnificent tasting at Pierre Cotton's, this O.V.N.I. arrived blind... We are lost, no comparison possible. It's normal, it's a blend made by mistake, a mix of chardonnay and gamay, and it's great! A nose of ripe white fruits to be crunched, ample and greedy mouth. The finish is surprisingly long. Forget the aperitif, this is a real Beaujolais for a meal.

Goes well with: blanquette, sweetbreads and veal feet, escalope panée, veal marengo, paupiettes... in short, veal in all its forms!

Pur sang 2018 - pommard village

Generally, Fanny Sabre, raises her Pommard in barrels then assembles them. After tasting about ten juices in barrels, we chose a Pommard that we asked her to isolate to make a unique cuvée. This wine was aged a little longer than the others, giving it suppleness and balance. An elegant and racy cuvée.

Spirit of Grolleau 2020

Thomas Carsin used to assemble his grolleau with his cabernet. But the day we came to taste his grolleau at his place, we loved it before assembly. Our exclusive cuvée will therefore be a 100% grolleau!
Digestible, neat, supple, black cherry aromas, delightful acidic notes, it is a wine that glides beautifully but will gain in depth and finesse over time.

Food pairing : roast veal, veal liver in sauce, poularde with mushrooms.

Small Nugget 2019

Rich, straight Grenache, pure. A fine, elegant structure and sublime freshness. A pure Grenache from 60-year-old vines, on soils with rolled pebbles, clay and sand. Hand-picked by hand. Vinification with indigenous yeasts and without inputs. Maceration of the whole harvest without destemming. Aged 11 months in half-muid. A wine full of life, made for laying down.

Between friends - Bourgogne aligoté 2019

Here is a vintage that aims to restore the coat of arms, sometimes a little tarnished, of the aligotés! On the nose as well as in the mouth, it is more than a delicacy. A 100% mineral nose (hot pebbles, flint), nice touches of ripe lemon from start to finish. Full of aromas, great freshness and beautiful tension in the mouth.

Food pairing : seafood, shellfish, oysters, snails, andouillette with mustard.
