All about organic, biodynamic and natural ciders and perries
What is cider?
Cider is an alcoholic beverage obtained from the fermentation of apple juice! It is believed to have originated in northern Spain in the first millennium. Generally speaking, cider can be found wherever there are apple trees. It is a drink with a medium alcohol content, often between 3 and 6°. We like cider for its thirst-quenching and sparkling side, it is a drink that can be drunk as an aperitif as well as for a festive meal! The association with a Breton cake is the best known, as is the association with a "galette des rois"!
The different types of cider
There are 3 main categories of cider:
- Sweet cider : this is the lightest and sweetest cider. Its sugar content must be higher than 42g/litre and its alcohol content is lower than 3°. It's almost like apple juice with a bit of alcohol ;)
- Semi-dry cider: its sugar content is lower (between 28 and 42 g/litre) and its alcohol content is higher (between 3 and 4.5°).
- Raw cider: raw cider is the least sweet cider (less than or equal to 18g/l) and the one with the highest alcohol content (around 5°).
This difference is mainly due to the fermentation time of the apple juice. The longer the fermentation time, the more the cider will change from sweet to brut.
Drinking organic and natural cider
On Petites Caves, we have decided to offer you ciders that respect our environment but also respect you. The majority of the ciders that you will find on this page come from organic and biodynamic agriculture. All the domains that have elaborated these ciders are similar in their desire not to use chemical products, either on the apple trees or during the fermentation of the apple juice. The apples are harvested by hand and the bubbles are produced naturally. These are pure products par excellence!
This will allow you to drink natural ciders, respectful of their terroir and with a unique taste. They are based on apples... and that's it!
Discover perry!
If you want a change, you can also find natural perries! This drink is similar to cider as it is made by fermenting pear juice. Poiré, like cider, is pale yellow/golden yellow in colour. It is a drink found and produced mainly in the north of France (Mayenne, Manche, Normandy...). Finally, perry is a drink with more roundness and smoothness than cider.
