Sauro Maule uses mainly natural solutions with the aim of eliminating all basic treatments to deliver pleasant, very fresh and simply good natural wines. The history of the farm "Il Cavallino" began many years ago in the hills of Colli Berici (Veneto) as a cattle breeding enterprise. Sauro's father, Lino Maule, a man of great experience and an incredible love for horses, wisely followed this activity and gradually passed on the taste for land work to his son. Then, a few years ago, Mauro bought 4 hectares of old vines in the Selva di Montebello Vicentino (also in the Veneto region), and changed the chemical philosophy of the vineyard by undertaking a revolution in the systems and techniques of cultivation. | He began by pulling up the vines that had the disadvantage of having been chemically treated. The vine is then replanted with the current Guyot system, which oxygenates the soil and contributes to the microbiological activity and further development of the plant's root system. Same philosophy in the winery, no synthetic substances are used. |
