We're telling you about their Winery
Laurent Cazottes, the "magician of the Tarn" with multiple hats, offers wines, brandies and natural liqueurs. His products are known throughout the world. Laurent inherited the know-how of his father who was a farmer but also and above all (as far as we are concerned) an itinerant distiller in the Tarn region. Strengthened by this heritage, at the end of the 1990s, Laurent Cazottes took over his father's distilling activity. After a vocational baccalaureate in viticulture and oenology and studies in the food industry, the youngster started out with a good foundation! He took over his father's old still, which has since settled down. Laurent settled in the Hameau du Carlu in Villeneuve-sur-Vère, a farmhouse about fifteen kilometres from Gaillac. He took over a farm with cereal crops, vines and oil plants. He had several hectares of "Williams" pears and "Reine-Claude dorée" plums (THE variety of the region) planted. The entire orchard, vegetable garden and vineyards are cultivated organically, with the addition of biodynamic practices. |
As a good artisan distiller, the eaux de vie are fermented and then evaporated without any input. The aim is to offer the purest and most natural eaux de vie and liqueurs possible. And to bring out the quintessence of the fruits and plants used. "Heir to the know-how of an itinerant distiller, I seek, in the work of my spirits, to combine tradition and respect for nature in order to produce the best possible quality" (a quote to be read with a beautiful South-Western accent, like Laurent's). Laurent also recovers pomace and wines from wine estates well known to natural wine lovers (Gramenon, Lassaigne, Métras...) to distil them and thus offer fines and eaux de vie from pomace that are also sublime. Recognized by his peers and praised by the great starred chefs, Laurent Cazottes has become the standard-bearer of artisan distillers. These eaux de vies and liqueurs are good for our soul and our taste buds. |
