What better words than those of Philippe Formentin to present the Opi d'Aqui project: Opi d'Aqui", in Occitan, means "opium from here". But here, in the Languedoc, it is the culture of the vine, an ancestral culture with 2000 years of history. Natural wine, attention, love. Devotion, the desire to make something beautiful, something good... After several years of training with Alain Chabanon (a great name in organic and biodynamic wines in the Languedoc), Philippe continued his apprenticeship around the world, making wine in Russia, India, the United States and Corsica. The Opi d'Aqui projectFollowing these different experiences and back in the Languedoc region in 2011, Philippe discovered so-called natural wines thanks to a meeting with an enlightened wine lover. This meeting was decisive for Philippe who then launched the Opi d'Aqui project. He has been buying and vinifying beautiful grapes (certified organic) since 2012 and offers a dozen or so vintages. Vinification is natural: no SO2 added (except for a few batches before bottling), indigenous yeast used, no inputs: After tasting Philippe's wines at two different shows, we fell under the spell of these hotties, both red and white, for their fresh and immediate profiles. They are pure, controlled juices that give pride of place to the crispness of the fruit. |
