We're talking to you about his Winery

The Winery of the Ecu (Muscadet Sèvre et Maine) has been certified in Organic Agriculture since 1975 and in Biodynamics since 1998 (Demeter label) on all of its 25 hectares. We often tend to forget that a great wine is above all made in the vineyard. The Winery of the Ecu has been aware of this since the 1970s. While others found faith in technological artifices and wine standardization, Guy Bossard followed the principles of organic and biodynamic agriculture: ploughing the soil, controlled yields, disbudding, disbudding, manual harvesting and respect for the biotope ... Guy Bossard passed the hand to Frédéric Niger, winemaker neophyte but ultra-passionate. The transition went smoothly, perfectly, for the best of Winery. Without upsetting the sure values, Frédéric concocts more personal vintages (pinot noir, cabernet...), and starts the vinification in amphora. He who gave up his work in Paris to return to his roots in Nantes, is here like a rooster in paste. The length of the ageing process has also been extended (between twelve and seventeen months) in order to develop the idea that Muscadet, in particular, can be a wonderful wine for laying down.
