We're talking to you about his Winery

At Jean-Baptiste Senat, Winery located in Trausse (Minervois) and certified organic by Ecocert, the land is healthy and the wines are sincere and close to nature. A living soil and healthy grapes always produce natural wines that have 'the mouth of the place and the guts of the winemaker'! A Parisian studying History and Political Science, it wasn't until the Paris strikes of 1995 that Jean-Baptiste Senat decided, against his family's wishes, to take over the winery and the century-old vines that had been abandoned by the family. Jean-Baptiste settled there with his wife Charlotte. With his sleeves rolled up to conquer a new life and a new profession, it took determination and courage to learn: the solitude, the cold nights, the aches and pains, the doubts, but also the solidarity of the first friends who came to give him a hand for the first harvests in 1996. As time went by, so did his apprenticeship, and the thread running through his adventure remained above all respect for the land, for nature and for the grapes - in other words, for the terroir. The work in the vineyards follows scrupulously, and more, the path of organic farming methods. Gentle pruning, old-fashioned weeding with a plough. The land learns by itself to give its best, to defend itself, to look for what it needs. In this 15 hectare Winery , there is no terroir, no parcel, no Grape variety more important than another. Each one gives the best it can offer. The winemaker is there to guide, to follow, he does not really impose much. The manual harvest is carried out in small crates on beautiful grapes with the maturity Jean-Baptiste is looking for. Fermentation with indigenous yeasts is most often in whole bunches to keep the aromas, the freshness and the finesse of the tannins. The natural evolution of the maturation is done without any other artifice than the accompaniment of winemaker. The blending that builds the cuvées of Winery (5 in number) remains the magic moment of the year.
