Cogito - Vin de France - Bédouet Vignoble
is THE cuvée of natural wine with no added sulfur from our winemaker-philosopher and admirer of Descartes. On this Melon de Bourgogne 30-year-old malo "are carried out. Hand-harvested, with indigenous yeasts. The wine is aged for 7 months in 4 containers: new barrels, older barrels, sandstone amphora, underground tank. DDelicate aromas of ripe grapes and peach. Beautiful balance and tension.
